Put Spring in your step with this Yummy Spring Salad!
Look around and take note - the variety of available produce is growing and local Farmer’s Markets are slowly ramping back up! What this means is that Spring is here and with it, an abundance of healthy and amazing fruits and vegetables.
Not only do locally sourced and in-season produce taste amazing, they serve to optimize our health, tune us in with nature and often, assist our bodies in detoxing from the season before.
Keep an eye out for bitter greens, sprouts, berries and lighter foods to help our bodies let go of some of our winter heaviness.
Here’s our newest Yummy Spring Salad:
Use a dark leafy green – spinach, kale or red lettuce – as your base.
Add in a healthy handful of dandelion – these have a bitter taste so you’ll want to use sparingly. They are an amazing detoxing green.
Add a chopped mango – high in fiber and vitamin B and will give your salad a nice sweetness.
Add the zest of a lemon and orange – both high in Vitamin C.
For the dressing - sprinkle 1) a light salad oil (we’re loving Walnut) and 2) apple cider vinegar.
Add a handful of crumbled feta cheese (or leave feta out if you want your salad vegan).
